Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Hazelnut Kitchen, V-Trumansburg
Food workers did not use proper utensils, gloves, etc to eliminate bare hand contact with cooked or prepared foods.  A food worker was observed handling strawberries for customer service with bare hands.  The product was discarded and the worker washed their hands and used gloves.

A re-inspection was satisfactory.

Wendy’s, 1-005 (Re-inspection), C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Bleu cheese, shredded cheese, sliced tomatoes, and salsa were observed at 50-58°F.  The products were placed in a cooler for rapid chilling to 45°F or below prior to return to service.

A re-inspection was unsatisfactory.  Board of Health action will follow.

Blue Frog Café, V-Lansing
Potentially hazardous foods were not stored under refrigeration.  Cream cheese was observed at 63°F on a counter.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was unsatisfactory.

Trumansburg Rotary Club Chicken BBQ (Temporary Food Service), V-Trumansburg
Potentially hazardous foods were at improper temperatures.  Cooked chicken was observed at 135°F.  The product was rapidly re-heated to 165°F prior to return to service.

A re-inspection was not conducted due to the short duration of the event.

Nines, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Mozzarella cheese was observed on a counter at 60°F.  The product was rapidly chilled to 45°F or below prior to return to service.

A re-inspection was satisfactory.

Collegetown Pizza, C-Ithaca
Potentially hazardous foods were not stored under refrigeration.  Various pizzas were observed on a counter at 77°F.  Several pizzas were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Robin’s Clubhouse Bar & Grille, V-Trumansburg
Potentially hazardous foods were not kept at or above 140°F during hot holding.  Hot dogs were observed at 112F.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Subway Sandwiches & Salads (Re-inspection), T-Ulysses
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Turkey, chicken, roast beef, tomatoes, cheese, and shaved steak were observed at 49-53°F for customer service.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was unsatisfactory. Board of Health action will follow.

Lansing Republican Committee Chicken BBQ (Temporary Food Service) , T-Lansing
Potentially hazardous food was at improper temperatures between 45-140°F.  Chicken halves were observed at 132°F.  The product was rapidly re-heated to 165°F prior to return to service.

A re-inspection was not conducted due to the short duration of the event.

LACS Canoe Group Chicken BBQ (Temporary Food Service), C-Ithaca
Potentially hazardous food was at improper temperatures between 45-140°F.  Uncooked chicken was observed at 53°F.  Cooked potatoes were observed at 124°F. The product was rapidly chilled and the potatoes rapidly re-heated to 165°F prior to return to service.

A re-inspection was not conducted due to the short duration of the event.

Taste of Thai Express, C-Ithaca
Cooked or prepared foods were subject to cross contamination from raw foods.  Fresh shell eggs were observed stored over ready to eat foods.  The storage was rearranged during the inspection.

A re-inspection was satisfactory.

Saigon Kitchen, C-Ithaca
Potentially hazardous foods were not cooled by an approved method.  Cooked chicken was observed at 63°F in a cooler for customer service.  The chicken had been placed in the cooler without proper cooling after cooking.

A re-inspection was satisfactory.

Ko Ko, C-Ithaca
Potentially hazardous foods were not cooled by an approved method.  Korean mashed potatoes were observed at 50-51°F.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.

Joe’s Restaurant, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Cooked sausage was observed at 60°F.  The product was rapidly chilled to 45°F prior to return to service.

A re-inspection was not completed prior to submission of this report.

Pizza Aroma, C-Ithaca
Cooked or prepared foods were subject to cross-contamination from raw foods.  Raw beef was observed stored over peppers for salad and prepared vegetable salad.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Food workers did not use proper gloves/utensils to eliminate bare hand contact with ready to eat foods.  A food worker was observed handling lettuce for a salad for customer service.  The product was discarded during the inspection.

A re-inspection was not submitted prior to submission of this report.

Imperial Kitchen, V-Lansing
Potentially hazardous foods were not kept at or below during cold holding.  Pork, crab, and beef were observed at 50-55°F.  The products were rapidly chilled to 45°F prior to return to service. 

Potentially hazardous foods were not cooled by an approved method.  Food was observed placed in a customer service unit immediately after cooling without proper cooling.  The product was observed at 56-64°F.  The product was placed in a cooler for rapid chilling to 45°F or below prior to return to service.

A re-inspection was not conducted prior to submission of this report.

Blue Frog Café (Re-Inspection), V-Lansing
Temperature logs, as required by previous Board of Health Orders, were not being maintained.  Temperature logs for part of April through May 23, 2012, were not present or observed at the time of the inspection. 

Board of Health action for violation of Board of Health Orders will follow.
