The violations listed below relate directly
to factors that could lead to food-borne illness or injury.
These violations generally involve the food source and condition,
food cooking and storage temperatures, sanitary practices, water
and sewage, and the use of poisonous materials.

Plantation Bar & Grill, T-Dryden
Cooked or prepared foods were subject to cross-contamination from raw foods. Raw meats were observed stored over hamburger buns, coleslaw, lettuce, and salad dressings. The storage was re-arranged during the inspection.
A re-inspection was satisfactory.
Bella Pizza, C-Ithaca
Potentially hazardous food was not stored under refrigeration. Chicken pizza was observed at 77°F on a counter for customer service. The product was discarded during the inspection in accordance with Technical Reference CEHPF 854.
A re-inspection was satisfactory.
Sicilian Delight Pizzeria, V-Lansing
Potentially hazardous food was not stored under refrigeration. Vegetable pizza was observed on the counter at 83°F for customer service. Required temperature log sheets were not being maintained for the pizza. The log sheet was completed with the appropriate information and discard time for the pizza noted.

Potentially hazardous food was not kept at 45°F or below during cold holding. A salad made of grilled vegetables was observed at 58°F on the salad bar for customer service. The product was placed in a cooler for rapid chilling to 45°F or below prior to return to service.

Second Landing, T-Lansing
Potentially hazardous food was not kept at or below 45°F during cold holding. Sliced ham was observed at 50-51°F. The product was rapidly chilled to 45°F or below prior to return to service.

Tompkins Cortland Community College, T-Dryden
Potentially hazardous food was not kept at or 45°F. Alfalfa sprouts were observed at 52-55°F. The product was rapidly chilled to 45°F or below prior to return to service.
Potentially hazardous foods were not cooled by an approved method. Diced chicken, sliced tomatoes, and diced tomatoes for customer service was observed at 50-53°F. The products were placed in a cooler for rapid chilling to 45°F or below prior to return to service.
Potentially hazardous foods such as salads were not prepared using pre-chilled ingredients. Tabouleh and tomato salads were observed at 53°F on a salad buffet for customer service. The products were rapidly chilled prior to return to customer service.
Potentially hazardous foods were not kept at or above 140°F during hot holding. Tomato pasta soup and cooked pork loin were observed at 132-136°F.
A re-inspection was satisfactory.

Enough refrigerated storage equipment was not maintained so that potentially hazardous foods were maintained at 45°F or below. Cheeses were observed at 50-52°F. The products were placed in a cooler for rapid chilling to 45°F or below prior to return to service.
