The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Ithaca Ale House, C-Ithaca
Enough refrigerated storage equipment was not maintained so that potentially hazardous foods were kept at or below 45°F.  Sliced tomatoes, cheese, sour cream, cooked chicken, sautéed peppers and onions, and pre-made meat sandwiches were observed at 57°F.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Taste of Thai, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Fried tofu was observed at 84°F.  The product was placed in a cooler for rapid chilling to 45°F or below prior to return to service.

Potentially hazardous foods were not stored under refrigeration.  Raw beef was observed at 60°F on a chest freezer.  The product was placed in a cooler to rapidly chill to 45°F or below prior to return to service.

A re-inspection was satisfactory.

Farrell’s Bar & Grill, V-Groton
Enough refrigerated storage was not properly maintained so that potentially hazardous foods were kept at or below 45°F.  Lasagna, sliced cheese, gravy, and vegetable noodle soup were observed at 53-65°F.  The lasagna was rapidly chilled to 45°F or below prior to return to service.  The other products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

GIMME! Coffee State Street, C-Ithaca
Cooked or prepared foods were subject to cross-contamination form raw foods.  Fresh shell eggs were observed stored over milk for customer service.  The storage was rearranged during the inspection.

A re-inspection was satisfactory.

Easy Wok, V-Lansing
Potentially hazardous foods were not stored under refrigeration.  Cooked potatoes were observed at 54°F on a cart.  The product was placed in a cooler for rapid chilling to 45°F prior to return to service.

A re-inspection was satisfactory.

CU Statler Hotel Banfi’s, C-Ithaca
Hot holding equipment was not properly maintained so that potentially hazardous foods were maintained at 140°F or above.  Pork loins were observed at 128°F.  The product was rapidly re-heated to 165°F prior to return to service.

Palmer Pharmacy, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Milk was observed at 50°F in a cooler.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Potentially hazardous foods were not stored under refrigeration.  Fresh shell eggs were observed on a counter at 61°F.  The product was placed in the cooler to chill to 45°F or below prior to return to service.

Potentially hazardous foods were not kept at or below 45°F during cold holding.  Cream cheese was observed at 50-67°F.  The product was rapidly chilled to 45°F or below prior to return to service.

Subway Dryden, V-Dryden
Potentially hazardous foods were not kept at or above 140°F during hot holding.  Meatballs were observed at 110-120°F.  The product was rapidly re-heated to 165°F prior to return to service.

A re-inspection was satisfactory.

Casper’s Diner, V-Groton
Toxic chemicals were improperly stored so that contamination of food could occur.  Aspirin and deodorant were observed stored over a food preparation area.

The products were removed from the food preparation area during the inspection.

A re-inspection was satisfactory.

Jade Garden, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Tofu was observed at 52-54°F.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Potentially hazardous foods were not stored under refrigeration.  Egg rolls were observed at 58-60°F.  The product was placed in the cooler for rapid chilling to 45°F or below prior to return to service.

Kelly’s Dockside Kafe, C-Ithaca
Potentially hazardous foods were not stored under refrigeration.  Fresh shell eggs were observed next to a grill at 90°F.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Moosewood Restaurant, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Sliced tomatoes, cooked squash, and tomato cucumber salad were observed at 50-53°F.  The sliced tomatoes and cooked squash were discarded during the inspection in accordance with Technical Reference CEHFP 854.  The tomato cucumber salad was placed in a cooler to rapidly chill to 45°F or below prior to return to service.

Friendly’s Elmira Road, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding.  Cheeses were observed at 51-53°F.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Potentially hazardous foods were not cooled by an approved method.  Cooked onions were observed at 53-67°F for customer service.  The product was not properly chilled prior to service.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.

State Diner, C-Ithaca
Potentially hazardous foods were not cooled by an approved method.  Large containers of meat gravy were observed at 70-180°F.  Two containers were in a cooler and a third container was observed in an ice bath for cooling.  The gravy in the ice bath was rapidly chilled to 45°F or below.  The gravy in the coolers was discarded by the operator during the inspection.

Enough refrigerated storage was not properly maintained so that potentially hazardous foods were maintained at 45°F or below.  Diced tomatoes and feta cheese were observed at 49-50°F in a cooler.  The products were placed in a functioning cooler to rapidly chill to 45°F or below prior to return to service.

Little Venice Ristorante, V-Trumansburg
Enough refrigerated storage is not maintained so that potentially hazardous foods were held at 45°F or below.  Clams and chicken were observed at 52°F in a cooler.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.

Moe’s Southwest Grill, C-Ithaca
Enough refrigerated storage was not maintained so that potentially hazardous foods were stored at 45°F or above.  Shredded cheese was observed in an ice bath at 53°F.  The product was placed in a cooler for rapid chilling to 45°F or below prior to return to service.

Jack’s Grill, C-Ithaca
Cooked or prepared foods were subject to cross-contamination from raw foods.  Raw chicken was observed stored next to lettuce for customer service.  The storage was re-arranged during the inspection.

Starbucks Coffee Company #11932, C-Ithaca
Potentially hazardous foods were not stored under refrigeration.  Half and half was observed on a counter for customer service at 52°F.  The product was discarded during the inspection in accordance with Technical reference CEHFP 854.

Jimmy John’s Gourmet Sandwiches, C-Ithaca
Potentially hazardous foods such as salads were not prepared from pre-chilled ingredients.  Tuna salad was observed at 52°F for customer service.  It was determined through interview that the tuna was prepared and placed in the sandwich unit for customer service.
