Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

CU Statler Hotel Terrace Dining, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Alfalfa sprouts were observed at 50-60ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Hot dogs were observed at 123-125ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Tellez Mexican Catering, Throughout Tompkins County
Potentially hazardous foods were not cooled by an approved method.  Cooked rice and cooked beef were observed at 70-90ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Accurate thermometers were not available to evaluate potentially hazardous food temperatures.  No thermometer was available at the time of the inspection.

A re-inspection was satisfactory.

ICSD Dewitt Middle School, C-Ithaca
Cooked or prepared foods were subject to cross-contamination.  Fresh shell eggs were observed stored above ready-to eat vegetables.  The storage was rearranged during the inspection.

A re-inspection was satisfactory.

Dragon Village, V-Trumansburg
Potentially hazardous foods were not kept at or below 45ºF during cold holding. Pork won ton was observed at 52-55ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHPF 854.

A re-inspection was satisfactory.

Hazelnut Kitchen, Trumansburg
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cream based topping was observed at 52-56ºF.  The product was properly iced for rapid chilling to 45ºF or below prior to return to service.

Potentially hazardous foods were not cooled by an approved method.  Cooked sliced potatoes were observed at 67-69ºF. The product was discarded during the inspection in accordance Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Dasan-J, C-Ithaca
Potentially hazardous foods were not stored under refrigeration. Fresh shell eggs and bean sprouts were observed at 60-67ºF on a counter.  Both products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Board of Health action will follow for repeat critical violations.

IC Towers Dining, T-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Sliced chicken was observed at 100-125ºF for customer service.  The product was rapidly re-heated to 165ºF prior to return to service.

A re-inspection was not conducted prior to submission of this report.

Blue Frog Café, V-Lansing
Potentially hazardous foods were not stored under refrigeration.  Milk was observed on a counter for customer service at 54ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was unsatisfactory.

Potentially hazardous foods were not stored under refrigeration.  Half and half and low fat milks were observed at 60-61ºF on a counter for customer service.  The products were discarded in accordance with Technical Reference CEHFP 854 during the inspection.

CU 104 West, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Stuffed flounder and cabbage tofu rolls were observed at 125-130ºF.  The products were rapidly re-heated to 165ºF prior to return to service.

A re-inspection was not conducted prior to submission of this report.

Dryden Middle School, T-Dryden
Potentially hazardous foods were not stored under refrigeration.  Meat and cheese sandwiches were observed on a tray at 64ºF.  The product was rapidly re-heated to 165ºF prior to return to service.

Wendy’s #1-005, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Sliced tomatoes, bleu cheese, and American cheese were observed at 52-56ºF.  The products were rapidly chilled to 45ºF or below prior to return to service.

A re-inspection was not conducted prior to submission of this report.

Big Rob’s, C-Ithaca
Cooked or prepared foods were subject to cross-contamination form raw foods. Fresh shell eggs were observed stored above ready-to eat lettuce and sliced cheese.  The storage was rearranged during the inspection.

Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cut tomatoes were observed at 50-60ºF for customer service.  The product was rapidly chilled to 45ºF or below prior to return to service.
