Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Plantation Bar & Grill, T-Dryden
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cut tomatoes were observed at 55ºF.  The product was rapidly chilled to 45ºF prior to return to service.

Potentially hazardous foods were not cooled by an approved method.  Cooked chicken was observed at 110-115ºF for customer service.  The product was placed in a cooler for rapid chilling to 45ºF prior to return to service.

A re-inspection was satisfactory.

Tucker’s Catering (Ithaca Festival the Commons), Throughout Tompkins County
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Sausage, cooked ribs, and cooked chicken were observed at 117-135ºF.  The products were rapidly re-heated to 165ºF prior to return to service.

A re-inspection was unsatisfactory.

Tucker’s Catering (Ithaca Festival the Commons), Throughout Tompkins County
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Sausage and cooked chicken were observed at 121-130ºF.  The products were rapidly re-heated to 165ºF prior to return to service.

Board of Health action will follow.

Moakley House, T-Ithaca
Enough refrigerated storage was not properly maintained.  The reach-in cooler in the kitchen was maintaining foods at 49-55ºF at the time of the inspection.  Homemade Ranch dressing, horseradish made from a sour cream base, and sour cream were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Dryden United Methodist Church (Dryden Dairy Days), V-Dryden
Potentially hazardous foods were observed at improper temperatures between 45ºF and 140ºF.  Cooked chicken was observed at 120ºF.  The product was placed on the grill for rapid re-heating to 165ºF prior to return to service.

A re-inspection was not conducted due to the one-day duration of the event.

Bella Pizza, C-Ithaca
Potentially hazardous foods were not cooled by an approved method.  Cooked chicken was observed at 89-92ºF for customer service.

A re-inspection was satisfactory.

Sicilian Delight Pizzeria, V-Lansing
Cooked or prepared foods were subject to cross-contamination from raw foods.  Fresh shell eggs were observed stored over tomatoes and lettuce.  The storage was rearranged during the inspection.

Potentially hazardous foods were not stored under refrigeration.  Multiple meat and vegetable pizzas were observed on a counter at 72-102ºF.  The products were served within the waiver time allotted but they were not in compliance with other aspects of the waiver.

Tamarind, V-Lansing
Enough refrigerated storage equipment was not properly maintained so that all potentially hazardous foods were not kept at or below 45ºF.  The walk-in cooler was maintaining foods at 53-56ºF.  All potentially hazardous foods were discarded in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.

Easy Wok, V-Lansing
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Sweet and sour chicken was observed at 127-130ºF.  The product was rapidly re-heated to 165ºF prior to return to service.

Subway Buttermilk Falls, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Chicken noodle soup was observed at 123ºF.  The product was discarded in accordance with Technical Reference CEHFP 854.

Family Medicine Associates Relay for Life, T-Ithaca
Potentially hazardous foods were at improper temperatures between 45ºF – 140ºF.  Pasta salad was observed at 57ºF.  The product was rapidly chilled to 45ºF or below prior to return to service.

A re-inspection was not conducted due to the one-day duration of the event.

Ithaca Youth Bureau Chicken BBQ, C-Ithaca
Potentially hazardous foods were at improper temperatures between 45ºF – 140ºF.  Potatoes were observed at 118ºF.  The product was rapidly re-heated to 140ºF prior to return to service.

A re-inspection was not conducted due to the one-day duration of the event.

Loaves & Fishes, C-Ithaca
Potentially hazardous foods were not stored under refrigeration.  Milk was observed at 55ºF on a counter for customer service.  The product was voluntarily discarded by the operator during the inspection.

A re-inspection was not conducted prior to submission of this report.

Haunt, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Various cheeses were observed at 74-75ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Mate Factor Café, C-Ithaca
Enough refrigerated storage was not properly maintained so that potentially hazardous foods were maintained at or below 45ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Dolce Delight, T-Ithaca
Enough refrigerated storage equipment was not present, properly designed, maintained or operated so that potentially hazardous foods are stored at or below 45ºF.  Macaroni & cheese, chili, and cheese sandwiches were observed at 60-62ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.   

Trumansburg Subway, T-Ulysses
Water/ice unsafe. No chlorine residual was present in the water supply at the time of the inspection.  The owner was notified and will correct the problem and notify the Health Department when the chlorine residual is re-established.

Potentially hazardous foods were not kept at or below 45 degrees F during cold holding.  Twelve pre-portioned packages of chicken were observed at 50-54 degrees F.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.
