Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

CU Jansen’s at Bethe House, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cooked pasta was observed at 58-60ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Enough refrigerated storage equipment was not properly maintained so that potentially hazardous foods are maintained at 45ºF or below.  Milks were observed at 48-50ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Yassine Yajid, Throughout Tompkins County
Accurate thermometers were not available at the time of the inspection to evaluate potentially hazardous foods.  The owner was directed to obtain an accurately scaled metal stem probe thermometer to monitor foods.

Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Beef, chicken, and gyro meat was observed at 98-117ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was satisfactory.

Lou’s BBQ, C-Ithaca
Potentially hazardous food was held at improper temperatures.  Pre-cooked hot dogs were observed at 62ºF in an ice chest without ice to keep the product at 45ºF or below.  The product was iced during the inspection to cool to 45ºF or below.

A re-inspection was satisfactory.

Elm Tree Inn, T-Groton
Cooked or prepared foods were subject to cross-contamination from raw foods.  Fresh shell eggs were observed stored over ready-to eat tomatoes.  The storage was rearranged during the inspection.

A re-inspection was not conducted prior to submission of this report.

Homewood Suites Food Service (Re-inspection), V-Lansing
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Skim milk and 2% milk was observed at 51-52ºF.  The milks were discarded during the inspection in accordance with Technical Reference CEHFP 854.

Board of Health action will follow.

Joe’s Restaurant, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Potato salad was observed at 49-52ºF.  The product was discarded during the inspection in accordance with Technical Reference CEHFP 854.

Loyal Order of the Moose #666, C-Ithaca
Enough refrigerated storage equipment was not maintained so that potentially hazardous foods were kept at or below 45ºF.  Milk and pickled eggs were observed at 52ºF.  The products were discarded during the inspection in accordance with Technical Reference CEHFP 854.

A re-inspection was not conducted prior to submission of this report.

Newman Golf Course, C-Ithaca
Cooked or prepared foods were subject to cross-contamination from raw foods.  Fresh shell eggs were observed stored over rolls and celery.  The storage was rearranged during the inspection.

Accurate thermometers were not available to evaluate potentially hazardous foods during storage.  No probe thermometer was available at the time of the inspection.  Staff was directed to obtain a thermometer.

A re-inspection was not conducted prior to submission of this report.

Coal Shack Café, C-Ithaca
Cooked or prepared foods were subject to cross-contamination from raw foods.  Fresh shell eggs were observed stored over lettuce for customer service.  The storage was rearranged during the inspection.

Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Sliced ham and turkey were observed at 50-51ºF.  The products were rapidly chilled to 45ºF or below prior to return to service.

Potentially hazardous foods were not stored under refrigeration.  Milk for customer service was observed on a counter for customer service at 56ºF.

A re-inspection was not conducted prior to submission of this report.

Paradise Café, T-Ulysses
Toxic chemicals were improperly stored.  Medication was observed stored over a food preparation table.  The storage was rearranged during the inspection.

Potentially hazardous foods were not cooled by an approved method.  Roast beef was observed in a cooler at 47-51ºF.  The product was discarded during the inspection.

A re-inspection was not conducted prior to submission of this report.
