Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

Critical Violations

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Seneca Place/Kilpatricks, C-Ithaca
Enough refrigerated storage was not properly maintained so that potentially hazardous foods were kept at or below 45ºF.  Cheeses were observed at 51ºF.  The products were voluntarily discarded during the inspection.

A re-inspection was satisfactory.

Plum Tree Japanese Restaurant, C-Ithaca
Potentially hazardous foods were not cooled by an approved method.  A five gallon pail of cooked chicken was observed at 48-50ºF after being in a cooler overnight.  The product was voluntarily discarded during the inspection.

A re-inspection was satisfactory.

CU-Keeton House Dining, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Meat and vegetable pizza was observed at 120ºF.  The product was rapidly re-heated to 165ºF.

Ithaca Bakery, V-Lansing
Potentially hazardous foods were not kept at or below 45ºF.  Smoked turkey was observed at 50-52ºF.  The turkey was rapidly chilled to 45ºF or below prior to return to service.  Smoked salmon was observed at 44ºF. The product is to be held at 38ºF or below.  The product was placed in a cooler to rapidly chill to 38ºF or below prior to return to service.

A re-inspection was satisfactory.

Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Lentil and bean soup were observed at 88-92ºF.  The products were voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cut pork was observed at 50ºF.  The product was voluntarily discarded during the inspection.

Accurate thermometers were not available to evaluate potentially hazardous foods.  No probe thermometer was on site at the time of the inspection.  Staff was directed to obtain an accurately scaled probe thermometer.

Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Chicken pieces were observed at 52ºF.  The product was voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or below 45ºF.  Pre-cooked noodles were observed at 58ºF.  The product was re-iced for rapid chilling to 45ºF or below.

Adulterated food was observed during the inspection.  Moldy Nacho cheese was observed.  The product was voluntarily discarded during the inspection.

Dryden Pizza, V-Dryden
Cooked or prepared foods were subject to cross-contamination form raw foods.  Fresh shell eggs were observed stored above ready-to serve deli meats and various other foods.  The storage was rearranged during the inspection.

Accurate thermometers were not available at the time of the inspection to evaluate potentially hazardous foods.  The food thermometer on site at the time of the inspection was inaccurate.  Dryden Pizza was directed to obtain an accurate thermometer or calibrate the existing thermometer.

Enough refrigerated storage was not properly maintained so that potentially hazardous foods were stored at or below 45ºF.  Sliced turkey and beef were observed at 50-55ºF.  The products were voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Cheddar cheese and sliced tomatoes were observed at 52-55ºF.  The products were voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Salt potatoes were observed at 123ºF.  The product was rapidly re-heated to 165ºF prior to return to service.

The Food Protection Program received and investigated nine complaints related to issues and/or problems at permitted food service establishments (FSE).  The complaints included food preparation and service, temperature abuse, accumulated garbage, and possible food related illnesses.
