JUNE 2009

Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Trumansburg Rotary Club Chicken BBQ, (temporary event), T-Ulysses
Potentially hazardous foods were at improper temperatures.  Cooked chicken was observed at 120ºF for customer service.  The product was served in less than two hours.

A re-inspection was not conducted due to the short duration of the event.

Lao Village Ithaca Festival, the Commons, C-Ithaca
Potentially hazardous foods were at improper temperatures.  Chicken bamboo and a tofu dish were observed at 134-140ºF.  The products were rapidly re-heated to 165ºF prior to return to service.

A re-inspection was satisfactory.

Travelers Kitchen Ithaca Festival, the Commons, C-Ithaca
Potentially hazardous foods were at improper temperatures.  Fresh shell eggs, ham, and cheese were observed at 49-60ºF.  The products were rapidly chilled to 45ºF or below prior to return to service.

A re-inspection was satisfactory.

Tucker’s Catering Ithaca Festival, the Commons, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Spare ribs were observed at 130-136ºF.  The product was rapidly re-heated to 165ºF prior to return to service.

Potentially hazardous foods were at improper temperatures.  Cheese was observed at 65-68ºF.  The product was rapidly chilled to 45ºF or below prior to return to service.

Smart Monkey Café, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding. Cooked chicken and alfalfa sprouts were observed at 53-75ºF. Both products were placed in a cooler for rapid chilling to 45ºF or below prior to return to service.

Jo Jo’s Lakebreeze Pizzeria, T-Lansing
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Fresh cut tomatoes and sausage were observed at 49-56ºF.  The products were rapidly chilled to 45ºF or below prior to return to service.

Woodland Roadhouse Taste of the Nation, T-Ithaca
Potentially hazardous foods were at improper temperatures.  Crab cakes and Jambalaya were observed at 110-130ºF.  The vendor voluntarily closed at the event.

A re-inspection was not conducted due to the short duration of the event.

Xiomara Spanish Food GIAC Festival, C-Ithaca
Potentially hazardous foods were at improper temperatures.  Cooked chicken was observed at 120-130ºF.  The product was rapidly re-heated to 165ºF prior to return to service.

ABC Café, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Beans were observed at 109ºF.  The product was voluntarily discarded during the inspection.

Jack’s Grill, C-Ithaca
Pre-cooked potentially hazardous foods were not re-heated to 165ºF within two hours.  Chili and gravy were observed at 90-120ºF.  Both products were voluntarily discarded during the inspection.

Plantation Bar & Grill, T-Dryden
Enough refrigerated storage was not maintained so that potentially hazardous foods were kept at or below 45ºF during cold holding.  Mashed potatoes, cut tomatoes, shredded cheese, and marinara sauce were observed at 49-56ºF.  The products were voluntarily discarded during the inspection.

Toxic chemicals were improperly stored.  Medication was observed stored above a sandwich cooler and insect spray was observed stored on the ice machine.  The products were moved during the inspection.

Subway the Commons, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Meatballs were observed at 110-125ºF.  The product was voluntarily discarded during the inspection.

Paradise Café, T-Ulysses
Enough refrigerated storage was not available, maintained or operated so that all potentially hazardous foods were kept at or below 45ºF.  Ground meat, tomatoes, feta cheese, and fried fish were observed at 49-54ºF.  The products were voluntarily discarded during the inspection.

A re-inspection was not conducted prior to submission of this report.

Just Desserts, C-Ithaca
Accurate thermometers were not available to evaluate potentially hazardous foods.  A probe thermometer on-site at the time of the inspection measured 10ºF to high.  The thermometer was re-calibrated during the inspection.

Enough refrigerated storage was not maintained so that all potentially hazardous foods were stored below 45ºF.  Eggs, mozzarella cheese, sausage, cream cheese, and half & half were observed at 53ºF.
The products were voluntarily discarded during the inspection.  A repair person was called.

Pizza Aroma, C-Ithaca
Enough refrigerated storage equipment was not properly maintained so that potentially hazardous foods were stored at 45ºF or below.  Feta cheese, sliced tomatoes, and mozzarella cheese were observed at 50-53ºF.  The feta cheese was voluntarily discarded.  The remaining products were moved to a functioning cooler.

A re-inspection was not conducted prior to submission of this report.
