Highlights - Food Protection Program

MAY 2009

Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The Hazard Analysis Critical Control Point (HACCP) Inspection is an opportunity for the establishment to have the health department review food processes in the facility to make sure that all potential hazards are identified and to assure that the best food safety practices are being used.

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Lou’s BBQ, C-Ithaca
Potentially hazardous foods were held at an unacceptable temperature.  Hot dogs were observed at 50-60ºF.  Cooked onions and peppers were observed at 67ºF.  The hotdogs were rapidly chilled to 45ºF or below.  The vegetable products were rapidly re-heated to 165ºF prior to return to service.

A re-inspection was satisfactory.

Blue Stone, C-Ithaca
Potentially hazardous foods were not kept at or above 140ºF during hot holding.  Mashed potatoes were observed at 112-120ºF.  The product was voluntarily discarded during the inspection.

A re-inspection was satisfactory.

Arby’s Elmira Road (re-inspection), C-Ithaca
Enough refrigerated storage was not maintained so that potentially hazardous foods were stored at or below 45ºF.  Cheeses were observed at 51-53ºF in a cooler.  The products were voluntarily discarded during the inspection.

A re-inspection was unsatisfactory.

Arby’s Elmira Road, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Swiss cheese was observed at 53ºF.  The product was voluntarily discarded during the inspection.

Green Café (Re-inspection), C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Fresh cut melons, seafood salad, tomato salad, mozzarella salad, and artichoke salad were observed at 48-60ºF for customer service.  The products were rapidly chilled to 45ºF or below prior to return to service.

Potentially hazardous were not kept at or above 140ºFduring hot holding.  Chicken pieces were observed at 120-138ºF for customer service.  The product was rapidly re-heated to 165ºF prior to return to customer service.

Enough refrigerated storage equipment was not maintained so that potentially hazardous foods were maintained at 45ºF or below during cold holding.  Sliced turkey, pasta, cheese, and chicken were observed at 53-58ºF.  The products were voluntarily discarded during the inspection.

A re-inspection was satisfactory.

Hope’s Way Café & Catering (Re-inspection), V-Lansing
Potentially hazardous foods were not stored under refrigeration.  Milk was observed at 60ºF in a carafe for customer service.  The product was voluntarily discarded during the inspection.

Inlet Island Café, C-Ithaca
Potentially hazardous foods were not kept at or below 45ºF during cold holding.  Chicken salad was observed at 50-52ºF.  The product was voluntarily discarded during the inspection.

Tio Thomas Ithaca Farmers Market, C-Ithaca
Accurate thermometers were not available to evaluate potentially hazardous foods.  The thermometer on site at the time of the inspection was incorrectly scaled from 60-220F.  The operator was directed to obtain a probe thermometer scaled form 0-220ºF.

A re-inspection was not completed prior to submission of this report.

Buzz Coffee, C-Ithaca
Food workers did not use proper utensils to eliminate bare hand contact with ready to eat foods.  A food worker was observed a staff person handling bagels for customer service.

Groton Golf & Recreation Association Inc.
Potentially hazardous foods were not cooled by an approved method.  Cooked pulled pork was observed in a cooler at 57ºF after being in the cooler overnight.  The product was voluntarily discarded during the inspection.

Water was unsafe.  The ultra violet water disinfection system was not properly maintained.  The operator was directed to correct the issue.

A re-inspection was not completed prior to submission of this report.

The Piggery Ithaca Farmers Market, C-Ithaca
Accurate thermometers were not available to evaluate potentially hazardous foods.  No probe thermometer was on site at the time of the inspection.  Staff was directed to obtain an accurate metal stem probe thermometer scaled from 0ºF-220ºF.

Potentially hazardous foods were not stored under refrigeration.  A jar of pork product was observed at 54ºF.  The product was rapidly chilled to 45ºF or below prior to return to service.

A re-inspection was not completed prior to submission of this report.

Loyal Order of Moose Ithaca Lodge #666, C-Ithaca
Cooked or prepared foods were subject to cross-contamination form raw foods.  Fresh shell eggs were observed stored over ready-to-eat lettuce and creamers.  The storage was rearranged during the inspection. 

Accurate thermometers were not available to evaluate potentially hazardous foods at the time of the inspection.  Staff was directed to obtain an accurately scaled metal stem thermometer to evaluate potentially hazardous foods.

A re-inspection was not conducted prior to submission of this report.

Pat’s Pizza, Inc., C-Ithaca
Cooked or prepared foods were subject to cross-contamination.  Fresh shell eggs were observed stored over lettuce and tomatoes.  The storage was rearranged during the inspection.
