Highlights - Food Protection Program

APRIL 2008

Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of poisonous materials.

Critical Violations were found at the following establishments:

Applebee’s Neighborhood Bar & Grill, C-Ithaca
Potentially hazardous foods were not kept at or above 140°F during hot holding. Baked potatoes were observed at 102°F. The product was rapidly chilled to 45°F or below prior to return to service.

A re-inspection was satisfactory.

 
Asian Taste, Farmers Market, C-Ithaca
Potentially hazardous foods were not kept at or below 45°F during cold holding. Bean sprouts observed at 53°F. Products rapidly cooled to at or below 45°F during the inspection.

A re-inspection was not conducted prior to submission of this report.

 
Borg Warner Building #2, T-Lansing
Potentially hazardous foods were not kept at or below 45°F during cold holding. Chicken salad observed at 53°F. Product voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or above 140°F during hot holding. Roasted vegetable & cheese sandwiches and hot three cheese sandwiches were observed at 120-134°F. Products rapidly reheated to 165°F and returned to service.

A re-inspection was not conducted prior to submission of this report.

 
CU- Trillium
Potentially hazardous foods were not kept at or below 45°F during cold holding. Grab & go potato salad, cottage cheese, and meat wraps were observed at 50 – 56°F. Products were rapidly chilled to 45°F prior to return to service

Potentially hazardous foods were not properly cooled to 45°F within 6 hours. Lo mein noodles in large deep pan were observed at 105°F in cold storage unit on service line. Product was rapidly chilled to 45°F prior to service.

A re-inspection was satisfactory.

Potentially hazardous foods were not kept at or below 45°F during cold holding. Tuna salad and sour cream were observed at 50-54°F. Both products were rapidly chilled to 45°F prior to return to service.

A re-inspection was satisfactory.

Accurate thermometers were not available or used at the time of the inspection to evaluate potentially hazardous foods. No food thermometer, scaled for 0°F-200°F, was available at the time of the inspection.

Potentially hazardous foods not kept at or below 45°F during cold holding. Bean dish and mushroom & rice dish were observed at 50-53°F. Products voluntarily discarded during inspection.

Enough refrigeration storage equipment is not present/maintained so that potentially hazardous foods stored at 45°F. Sliced provolone cheese, brie cheese wedges, cooked chicken breasts were observed at 49 – 53°F. Condenser was observed icing up. Products voluntarily discarded during inspection and refrigeration repair company was called.

A re-inspection was satisfactory.

 
Sunset Grill, T-Ithaca
Potentially Hazardous foods not kept at or below 45°F during cold holding. Sliced American cheese observed at 61°F. Cheese voluntarily discarded during the inspection.

Food workers do not use utensils or gloves to eliminate bare hand contact with cooked or prepared foods. Food worker observed touching lettuce, tomato and pickle for sandwich with bare hands. Food voluntarily discarded during inspection. Food worker washed hands and put on gloves.

A re-inspection was not conducted prior to submission of this report.

Happy Eating Grounds, Cornell Powwow, C-Ithaca
Utensils or gloves not used to eliminate bare hand contact with cooked or prepared foods. Food worker observed touching tortilla chips with bare hands. Food voluntarily discarded and employee washed hands and put on gloves during the inspection.
