Highlights - Food Protection Program

Routine facility inspections are made without advance notice. It is important to keep in mind that inspections are only a “snapshot” in the entire year of a facility’s operation and they are not always reflective of the day-to-day operations and overall condition of the operation.

The violations listed below relate directly to factors that could lead to food-borne illness or injury. These violations generally involve the food source and condition, food cooking and storage temperatures, sanitary practices, water and sewage, and the use of toxic materials.

Critical Violations were found at the following establishments during routine inspections:

Dasan-J Restaurant, C-Ithaca
Accurate thermometers were not available at the time of the inspection to evaluate potentially hazardous foods. No metal stem probe thermometer was available. Dasan-J staff was directed to obtain an accurate metal stem probe thermometer.

A re-inspection was satisfactory.

 
Ten Pin Café, C-Ithaca
Accurate thermometers were not available at the time of the inspection to evaluate potentially hazardous foods. No metal stem probe thermometer was available. Ten Pin Café staff was directed to obtain an accurate metal stem probe thermometer.

Plum Tree Japanese Restaurant, C-Ithaca
Cooked or prepared foods were subjected to cross-contamination from raw foods. Raw chicken and raw beef were observed stored above lettuce for customer service. The storage was rearranged during the inspection.

Potentially hazardous foods were not kept at or below 45°F during cold holding. Milks were observed at 51-52°F for customer service. The products were voluntarily discarded during the inspection.

Potentially hazardous foods were not kept at or above 140°F during hot holding. Chili was observed at 117-120°F for customer service. The product was rapidly re-heated to 165°F prior to return to service.

A re-inspection was not conducted due to the short duration of the event.

Potentially hazardous foods were not kept at an acceptable temperature during hot holding. Hamburgers were observed at 125°F for customer service. The product was rapidly re-heated to 165°F prior to return to service.

A re-inspection was satisfactory.

Potentially hazardous foods were not cooled by an approved method. Two top round roasts were observed in a cooler at 48-50°F. The product was voluntarily discarded during the inspection.

Todi’s Italian Pizzeria, V-Dryden
Accurate thermometers were not available to evaluate potentially hazardous foods at the time of the inspection. No probe thermometer was present in the facility at the time of the inspection. The operator was directed to obtain a metal stem probe thermometer.

Potentially hazardous foods were not kept at or below 45°F during cold holding. Sliced beef and ham were observed at 50-53°F in a cooler. Both products were rapidly chilled to 45°F or below prior to return to service.

A re-inspection was not completed prior to submission of this report.

Enough refrigerated storage equipment was not properly maintained so that potentially hazardous foods were kept at or below 45°F. Sandwiches and cream cheese were observed at 50-52°F. Both products were voluntarily discarded during the inspection.
